Quick & Easy Singapore Noodles

Who loves Singapore noodles? 🙋🏻‍♀️

Whenever I want to whip up something quick and effortless I always go for pasta or noodles! Even at restaurants I go straight to the noodles on the menu 😂 they are just heaven!

Here’s the recipe for these tasty noods:

Serves 2

Singapore noodles for two

1 tbsp olive oil

Half bunch of spring onions

2 or 3 cloves garlic

Handful baby spinach

1/3 cup sweet chilli sauce

1/4 cup soy sauce

1/2 lime juice

Optional - small cube of ginger

1️⃣ In a pan heat the olive oil. Add the minced garlic and chopped spring onions. If you’re using ginger add that now. Mix together as you heat, until onion and garlic softens.

2️⃣ Add the Singapore noodles (check the packet as these may need to be cooked in boiling water)

3️⃣ Add the sauce and a couple of tablespoons of water to thin it out slightly. You can adjust the sauce measurements to suit your taste.

4️⃣ Drizzle with lime juice and add the spinach last. Mix together and cook for a further couple of minutes until spinach is cooked. Divide into bowls and enjoy!
